小土豆烧排骨<br />
豆渣小饼:面粉300克 豆渣100克 豆浆适量 盐1克<br />
主料 排骨500克 小土豆300克 <br />
调料 料酒20毫升 白糖5克 老抽10毫升 蚝油10毫升 大喜大烤肉酱50克 盐适量食用油15毫升 <br />

做法:<br />
1 面粉和豆渣、豆浆、盐混合揉成软硬适中的面团,盖上保鲜膜松弛30分钟。<br />
2 松弛好的面团搓成长条。<br />
3 分成若干个面剂子。<br />
4 把面剂子依次擀成小饼,备用。<br />

5 准备需要的材料。<br />
6 锅里烧开水,加入料酒放入排骨焯水。<br />
7 焯好水的排骨洗净血沫控干水分备用。<br />
8 锅里倒油烧热,放入排骨翻炒。<br />

9 放入白糖,翻炒至排骨表面微黄。<br />
10老抽、蚝油和大喜大烤肉酱翻炒至排骨上色。<br />
11 放入小土豆一起翻炒。<br />
12 加入适量的盐。<br />

13 在锅的周围贴上事先擀好的豆渣小饼。<br />
14 倒入与排骨齐平的开水,大火烧开后小火炖30分钟。<br />
15 30分钟后取出豆渣小饼,改大火收汁。<br />
16 装盘。<br />
